Leon Drogy: What a Banquet Manager Does

For people who work in restaurants, stress and long hours come with the territory. Even so, restaurant work is something that Leon Drogy loves doing. For almost two decades now, the Colonial Terrace’s current Vice President for Catering has been working for various New York restaurants in various management capacities.

Working as Sales Manager for Classic Caterers was Leon Drogy’s first step toward the direction of restaurant work although meeting or event planning was the first field he ventured into after graduation from Dickinson College in Philadelphia. It was a good move on his part for his event planning skills came in handy and gave him the necessary organizational skills in his current position at Colonial.

Shortly after, Leon Drogy moved on to banquets. He was hired first by Water’s Edge Restaurant and then by Tavern on the Green as a Banquet Manager and eventually as Director of Banquet Operations.

Leon Drogy job as Banquet Manager required performing the following: 1) overseeing all aspects of staging a banquet from arranging the site, picking the menu, preparing the food, serving it and cleaning up the site afterward; 2) supervising banquet staff, from hiring them, training them, coaching them and evaluating their performance to ensure that company standards were met.

Banquet Manager for Restaurants

The first restaurant that Leon Drogy worked for was at the “Water’s Edge Restaurant” in Long Island City, New York. He was a Banquet Manager of the said restaurant from 1992 – 1995. Mr Drogy soon moved on to another restaurant called “for Tavern on the Green Restaurant” situated in New York. He again worked as a Banquet Manager from 1995 – 1996.

Leon Drogy’s duties as a Banquet Manager would include planning, organizing and directing the service of food and beverages for banquets and other social functions. Part of his job description is to converse with clients regarding requirements that they deem necessary and take note of information pertaining to the banquet. Other responsibilities of Leon Drogy would involve producing banquet menus while discussing it with the cooks, chefs or caterers. He is also in-charge of the budget as well as the supplies needed for the event and the staff who will be serving during that function.

Leon Drogy’s role as a Banquet Manager is to oversee the entire event from start to finish. His other tasks involve managing the work schedules, administering the food services throughout the function and sustaining the appropriate liquor control and alcohol service. Garnering comments, suggestions and feedbacks from clients are important as well and dealing with customer complaints in a professional manner. As a Banquet Manager, Mr Drogy has to hire, train, supervise the staff and make sure that the service standards are met while taking responsibility over everything.

Leon Drogy: Expertise in Event Planning

Having worked as a professional for many years, Leon Drogy has numerous skills and expertise in many areas. As such, his fields of expertise have helped him in the different industries that he worked for. Some of his expertise includes event planning. As an event planner, Leon Drogy had to oversee and manage certain strategic, operational and logical actives that are essentially needed for the production of the events.

Leon Drogy is adept when it came to budgeting, ascertaining dates and alternating dates; choosing and reserving the location of the event proper, obtaining permits and taking care of the transportation along with parking issues.

Being an event planner also meant that there were times when Mr Drogy would have to come up with a theme or motif for the event along with making plans for necessary equipments such as speakers and alternate speakers as well as managing location support like electricity and other utilities. Leon also organizes decors, tables, chairs, tents, event support and security, catering, parking, signage, emergency plans and clean-up amongst others.

With his ability to handle pressure well and having great organizational skills while communicating effectively to everyone involved including the clients of the said event deeply shows that Leon Drogy is not only up for the challenge but excels in it quite well.
